Caramel Sauce and Cake Topper


Who doesn’t like a caramel sauce, huh?! …if you’re  wanting to use up some muffins  or making a fresh batch how about making a caramel sauce or topper which will make it feel like a decadent treat or a beautiful way to show someone how much you love them … anyway, that’s the excuse I’m using and I’m sticking with it!!! Making the sauce couldn’t be any quicker or simpler and it’s great to mix with other toppings like coconut yoghurt and roasted nuts. If you want to take it one step further, using moulds or rings simply allows the sauce to cool and set to make the most beautiful toppers. You can mix through or decoratively arrange with nuts, fruit or cacao nibs and use them any time …

Ingredients: Carmel Sauce

  • 2 Tablespoons  of Rice Malt Syrup or Brown Malt Syrup
  • 2 Tablespoons of Nut Butter (Tahini, Almond, Cashew, Macadamia, Hazelnut, etc)
  • 1 Tablespoon of Double Cream (Milk, Almond, Coconut, etc)
  • 20 grams of Butter

Ingredients: Cake Topper

  • 2 Tablespoons  of Rice Malt Syrup or Brown Malt Syrup
  • 2 Tablespoons of Nut Butter (Tahini, Almond, Cashew, Macadamia, etc)
  • 1 Tablespoon of Double Cream
  • 20 grams of Butter
  • 1 cup of mix Roasted Nuts (Almonds, Pecans, Walnuts, Macadamia, Hazelnuts, etc)


    Bowl and mental ring or silicon moulds


  • In a bowl  melt together  the Rice Malt Syrup, Nut Butter and Butter
  • Stir continuously if using a saucepan
  • Check after a minute if using the microwave
  • With both methods ensure the mixture is not overheated or burnt
  • Once you see slight bubbles forming remove from heat
  • Stir through double cream
  • If using for a sauce simply pour and serve immediately



  • If using as a cake topper, mix roasted nuts through sauce and pour into moulds
  • Place in the refrigerator to cool until set
  • Once set place on top of muffins before serving





  • The longer the sauce is left to refrigerate the thicker it becomes
  • Sauce can be poured over coconut yoghurt and topped with roasted nuts




  • Nuts can be simply mixed through or decoratively arranged
  • The topper simply slides out of moulds or pushes gently out of the rings
  • Slicing the muffin/cake tops level, enable the topper to be placed more easily
  • Toppers can be pre-made, kept in the fridge for a couple of days or frozen for longer




  • Sauce can be simply drizzled and topped with roasted nuts



  • Use to make Banoffee, by freezing banana with caramel on a chopped nut and butter base, topped with coconut yoghurt and finally sprinkle with Maca.

  1. My sweet friend…the pictures you post are just dreamy, but sadly I’m not much of a baker!!!! Since you’ve inspired me to opened my mind to so many other adventures, I guess I’ll have to add some type of baking to my list of things Sarah would have me try!!!😂❤️😂 Once again you inspire, delight, and amuse just by being you! ❤️❤️❤️
