Baked Scotch Egg!

This recipe was a total winner with hubby so I thought I’d share it!

They’re really quick and easy to make, that’s what we all want to hear, right?! You can simply have eggs and sausage ready to go, anytime, anyplace. They’re an easy snack or main meal when eaten with veggies or salad. (Not that, that happened with hubby, but it’s a thought.)

Ingredients:

  • 4 Eggs
  • 5 Sausages (check for any added sugar)
  • 1  Cup Polenta
  • 1 Tablespoon Paprika (or more to taste)
  • Handful of chopped Parsley (or any other herbs you prefer)
  • Seasoning to taste (Salt, Pepper, Garlic Salt, etc)

Equipment:

3 Bowls, whisk, baking tray and parchment paper

Directions:

  • Preheat oven to 200 degrees
  • Soft boil 3 of the eggs (approximately 6 minutes)
  • Rinse the eggs in cold water and shell
  • Remove skins from the sausages and gently flatten out
  • Wrap sausage meat around egg in two parts. Copying the shape on a tennis ball?

  • Pinch edges closed and roll gently in your hands
  • Mix together the Polenta, chopped Parsley and Seasoning in one bowl
  • Whisk remaining egg in another
  • Roll covered egg in dry mixture first, then the whisked egg

  • Roll and coat again in the dry mixture
  • Place on a baking tray with parchment paper

  • Bake for 30 minutes, or until the sausage meat is cooked
