Baked Scotch Egg!

This recipe was a total winner with hubby so I thought I’d share it!

They’re really quick and easy to make, that’s what we all want to hear, right?! You can simply have eggs and sausage ready to go, anytime, anyplace. They’re an easy snack or main meal when eaten with veggies or salad. (Not that, that happened with hubby, but it’s a thought.)

Ingredients:

  • 4 Eggs
  • 5 Sausages (check for any added sugar)
  • 1  Cup Polenta
  • 1 Tablespoon Paprika (or more to taste)
  • Handful of chopped Parsley (or any other herbs you prefer)
  • Seasoning to taste (Salt, Pepper, Garlic Salt, etc)
